Are you asking how to do quests at night easily?

There's no timeskipping system in MHW that I know of, but each Quest or Expedition that lasts at least a few minutes you do advances the time of day immediately, so do a few quests you can beat in under a minute until you see that the sun's setting in Astera.

Alternatively you could just idle in Astera, time advances slowly while you're there.

if its for the gajalaka quest i just went afk near the quest guy and watched some vids till its night time

Think it's possible to just start a quest and abandon it to advance the day/night cycle a few "hours". Pretty sure this is what I did to catch the Nekker.
