In Iceborne, the first real difficult monster is Barioth, then you'll go with Nargacuga, Glavenus, Brachydios and then that nightmare called TIGREX, next monsters aren't more difficult, but not easier for the majority.
Enemies don't do much but stand there and let me hit them, kinda sad.
Hopefully you can get there without losing interest.
Pukei-Pukei and similar bosses are essentially tutorial fights that introduce mechanics one step at a time to avoid overwhelming people. Anjanath is the first proper monster that starts to challenge some people, but where you are personally challenged will vary depending on individual.
It should also be noted that if you're using Defender/Guardian equipment, you're essentially stomping mice with an orbital cannon and shouldn't be surprised you have no trouble.
If your are using it, got to the box get the standard armor, play some quests them come back here to report if its easy
