if we are talking about extreme, nyyyyyyeno.
at xeno and nerg tend to one hit. behemoth is more forgiving imho.
just need the right people and not wipe before phase 2 or better not at all?
I started by running in when his back was turned and grabbed some Shattercryst. When he turned around and walked back toward the large crystals I lured him under them with Shattercryst and knocked down the crystals. I quickly placed my bombs and hit him with Wyverns Fire, which is an attack that doesn’t draw aggro. I then Farcraster back and had dealt a chuck of damage to him and coult repeat until he sees me, which is what the Ghilli was for.
Honestly just liked seeing how long I could keep this cycle up. I’d never bothered using the environment before, but it was too tempting to pass up.
AT nergi > AT xeno > Extremoth w my buddies (someone playing as tank so..) > Behe solo
But 'maybe' cuz never touch any other weap before :V

Extremoth in random party is just...madness, even the normal one :(

But if you have a veteran , good team, behemoth is a walk in the park.
What makes Behemoth difficult is that he has a true oneshot attack with a lot of difficulties in avoiding it. If the party you've gotten is bad at dodging Ecliptic Meteor you are simply screwed.
What makes AT Xeno/Nergi difficult is plain and simply being hard fights all around, with Xeno jumping all over the place and leaving lava pools everywhere and Nergi having all its attacks being extremely deadly.
So AT Xeno/Nergi are well-rounded, difficult fights, Behemoth is a fight with a specific gimmick that can easily destroy a bad player/party no matter how well-equipped they are. I would personally say Behemoth is harder, but there isn't really a right answer.
Also, I took both of them down without Drachen armor- Not trying to boast, but observing that it's possible. Drachen armor is great and all, but if you have other Arch-Tempered armorsets already you'll be fine.
For me though, this is due to randoms
Honestly Extreme Behemoth is the hardest.
Now this isn't because the Monster itself is actually tough. Its not. No its the amount of extra going on and how long you have to fight him for. Remember Ex Behemoth is always multiplayer scaled.
AT Nergi is next. Honestly he's fast and aggressive which means you need to be on your game. But with SnS and SA most of the attacks are actually really easy to dodge once you've fought him once or twice. Multiplayer actually can go both ways here. Either his random all over the place attacks get you caught out or they constantly give you time to heal if you messed up.
Behemoth and AT Xeno is really easy in comparison to those 2. Honestly with the proper gear neither of these is actually that hard. Its just that they have a lot of HP so the fights drag-on.
Heat Guard and/or a cold drink means that AT Xeno's big gimick is nullified and then its just a Xeno that hits harder. You should never be in front of Xeno so the one shot mouth laser is just free damage to the head.
Behemoth on the other hand doesn't hit hard or fast enough to really be an issue. And since you can pretty much flash away all the problematic attacks again its just a long drawn out fight.

Lastly none of this matters if you go in with a defensive set like a Lance or GL build. Heck Spread 3 Glutton will wreck any of these but AT Nergi.
But this thing is a huge hp sponge. 35k hp sponge.
And apparently, it can heal itself for 700 hp each time you aggro him and leave the area
