You obviously didn't dodge at the right time though.
Sounds like you're mid or fatrolling and have discovered why those are really bad in Dark Souls. You have less I-frames the worse you roll so you should have learned to optimize your build by this point in the game. The absolute earliest you can access the DLC is mid-game and most people don't access it until right before they go take on Gwyn. You've had ample time to adjust strategies and learn to think on the fly. Nothing about Manus is hard other than how aggressive he is. Only Artorias is as aggressive of a boss as he is. But they both have patterns and tells.
If you're mad about phase 1 you're going to have a stroke over his Dark Magic in Phase 2. Even if you got the Pendant it's bugged so have fun kid.
A shield? Are you blocking his attacks? Why? If that shield isn't a Grass Crest Shield why even wear one in that fight?
Keep jogging around the arena and when he's about to hit you with the longer slam attack, you'll notice he winds his arm up first. Simply roll out of the way twice to avoid this. Like before, do a running attack into his giant hand.
Keep doing this until he's finally down to around half his health. Now he'll start spamming you with dark sorceries. 2/3 of them can easily be dodged without the Silver Pendant (the dark rain attack and the dark beads he shoots out in front of him). As soon as he casts the Pursuers in a circle around the arena activate the Silver Pendant, they should all be deflected. Follow what I said in the first and second paragraphs, profit. This has never failed me, and you don't need a shield with this method.
Get Hawk Ring.
Go to the boss fog gate and look into the hole. See those tiny red things? They are Manus beady eyes.
Snipe him for the next 20 minutes with tiny chip damage.
I don't remember if he is affected by poison, so try poison arrows for extra chip damage.
You don't need to fight everything, get creative, other options exist for most bosses.
- The greatshield of Artorias is capable of tanking Manus' entire punching combo, then you "spell" him or you have enough stamina for a single attack(hopefully).
- Have the silver pendant ready unless you need to heal.
- Sif can help by being a meat-shield, but summoning her doesn't give you extra damage, only the opportunity to heal more often.
- Only try rolling through attacks once you undrestand how invincibility frames work. It can be hard to know both when you are in I-frames and how much collision time is required to be immune to damage. Rolling into something coming at you means less time spent with your hitbox in the enemies collision area so you have enough invincibility.
The only part of "git gud" you should already know: the more you die, the more you learn how not to and the less likely you are to die by the same thing...but even speedrunners still die.
