Can you play, with Steam in 'offline mode'?
Just don't want hackers.

You don't even need to put Steam into offline mode. You can log out of the Dark Souls servers in specific by selecting "Log Out" in the main menu. You can also start Dark Souls directly in offline mode, it's somewhere in the options.

You can play DS in Offline, yes.

Thank you.

I was expecting that you could not play offline. I saw a Youtuber playing and they lost connection and were returned to main menu. I thought it was online or not at all.

Dark souls just boots you to the menu if you lose connection. You can continue playing offline from there.

Today is ban wave day so hopefully we will see less hackers tomorrow :)

It just needed to restart as offline. BTW if you are not human you can't get invaded. You also can't get invaded if area boss is dead. So basically you can skip multiplayer alltogether even if you are online.

Thank you everyone.

I had even forgotten that you can't be invaded when hollowed. Muchas gracias all.

I chose the first anwer as best because it explained that I can set DS:R offline in the menu. Meaning I can keep Steam online to talk to friends.

Although officially and specifically, the second answer was the direct answer to my question. Would have liked to have given thumbs up to both first and second answer.

I have not tried out the solution given by cautr, because I didn't buy DS:R yet. However I am going to go ahead and trust this answer, as perfect.
