How to remove sockets from items?

I was looking for an item in the market which comes with a gem, so i was seeing only ones with empty sockets (thus the gem was removed) but for my surprise in the list i found like 5 of the same with no gem but with no socked too, it was clean like normal item.

How people do that? that is my question

then how an item which comes by default with a gem, has no gem or sockets on it, is because the item can come with gem or not too? or gem was removed by valve in the past or how come

so then there is version of items from boxes which comes or not with gems so thus has no empty socket, didnt know that, thanks.

I can remove the socket on my Anti Mage offhand Immortal, all i have to do is buy another immortal hand and rebundle it, and after its a bundle you can unbundle it and the socket is remove. But this limited only to item or set that can rebundle, if you have, lets just say Huskar immortal head, you cant remove the socket doue the immortal cant be rebundle like Antimage weapon immortal, bloodseeker weapon immortal, or Ember spirit weapon immortal wich comes with 2 weapon for the bundle.
