If I already have good performance in DirectX 11, is there any reason to enable "Compute Shaders"? I mean does it visually alter the graphics at all?

no changes in render quality, but it does free up GPU resources for better render time.
or to put it in another word, more frame rate, lower frame delay (input lag) and fewer stutters.

should I turn "compute shaders" on or off? Im running an i7 8700k/gtx 1080 ti setup.

You should be able to run everything at ultra with one hand tied behind your back.
