Their title is simply determined by their stats.
And the titles do nothing.
I didn't have more detail, sorry.
You can have several characters share the exact same stats when they level up and have done the same type of work, yet they all have different titles. xD
Titles can indeed change depending on the type of work you do with the employees, but it can also depend on the abnormality and department you let them work in.
For example, when they receive a set of glasses and level up, their title might change to smartass.
Titles affect their max stats. They also affect how good they are at certain things, but I can't say what and where.
What I found and think though, a uniter is generally better in attachment work and gets higher stat in it. Strategists are good in justice. Laziness is an indication of lower succesrate with most, except with insight (I think?). 'cold-blooded' raises e.g.o. damage output. (at least they more often do the max damage)
You'll have to experiment to be certain.
