What are the best headphones to use for this game?

if you want to soundscum then any decent gaming headphones that comes with an equalizer.
otherwise the default vr headset phones work fine

I'm on a Rift S. I just plug an old pair of apple headphones into mine and it sounds great.

The Betron DC950HI are darn good for like $15 off amazon. I found that my kids are too noisy for me to use most headphones and these cut out all external noise, and are super comfy for hours of use if you use the foam earbuds. Plan on buying a extra pack of foam earbuds if you get these : 12Pcs Replacement Eartips- RIYO Premium Memory Foam (~$7) so you can wash and rotate the earpieces and keep things hygienic

In-ear´s are best for spatial localization, since they bypass the ear outside completly. There is also less sweat with them. Any decent quality headphone, (read: somehow linear) will do for this, we are not listening to classic music here after all. If my ear could just keep them in when turning around fast..wonder if the foam would solve this problem.

I have my headphones looped and tied to my headstrap with a twist tie with just enough cable to go to my ears and then to the headphone jack. If you do that the headphones and cable move with your head and the earbuds will not move at all until you remove them, and it keeps things from getting caught like if you use a gunstock/shoulder strap, etc. The silicone earbuds work fine with this setup, but are way less comfy for extended gaming sessions. My ears feel a bit raw if I use the silicone ones for more than 30min or so... the foam ones I could probably leave in all day.
