It's possible to roll out of all of her attacks, nothing is actually nondodgeable, but getting the rhythm down is very hard lol I don't blame you.

i feel this is accurate for most the boss fights honestly, like yeah i used the cheater options the first go cause adhd makes it hard to learn these fights normally, hence i dont usually play these sorts of games but this one was just too hard to pass on but im on the second go and already downed two of the bosses the proper way, by far the toughest is the last boss for me... so much insanity happens in that fight its hard to keep track off....even when your using cant fail options.... -_-
Ordinarily, I don't play games with Souls-like combat, myself, but I couldn't resist this game's allure and frankly the combat isn't nearly on the same level difficulty-wise, so it wasn't that tough for me to keep at it, and I definitely do not regret dumping all these hours into the game.
