It's a reference to the term Greenhorn, which is someone that is new or inexperienced.

Since we're dwarves, we have magnificent beards, so a Greenbeard is a new or inexperienced dwarf.

It's both, players start out with the rank of Greenbeard at level 1.

Yup, and another on occasion after waking up in the medbay post-mission failure: “That’s what happens when ya pair me up with a buncha greenbeards…”

It's a lore-friendly way the community describes new players. As others have said the term comes from Greenhorn just dwarfified into Green Beard. It also works quite nicely because a term for a Veteran/experienced person is Grey Beard.

Also while the game does have a progression/rank system it's almost entirely irrelevant for most game's. The community is incredibly welcoming. Just avoid any lobby with titles like "X completion+X build required" all other lobbies are open season. Personally I have found that the dumber the lobby title the more fun the match.
