Yes, 10 knots is "too fast" to fire a Mk 37, and you will outrun your own torpedo and it will detonate on you. (Even when you fire dead ahead.)
Yes, that's MASSIVELY frustrating when that happens.
So the issue is not the angle but the fact that the sub didn't steer clear of the torp in time.
The steeper angle i was talking about simply created more distance since it moved away from the sub. I never noticed that i was going slower in that part of the vid.
