Do gas pipelines need pumps?
Say nitrogen? I would think line pressure would suffice, but do they behave like liquids in this game?

Pumps are only for providing head lift for fluids (aka how high will the fluid climb in a pipe), they don't help help things move faster or farther in any direction.

And as gasses have no head lift requirements...

It depends on the situation... as Daba already said: mostly when dealing with uplift but even that depends on how you build your setup and what machines you use. Most machines (like the refinery) already provide enough pressure for 10m uplift themselves so then there's no direct need for a pump, even if you have a little uplift.

This is true of liquids, but OP is asking about gases. Or... gas and plasmas? since we still only have Nitrogen as a gas...

Nitrogen flows everywhere. I just made 1,5km of pipe from the well to the oil facility. No buffers, the pipes are the buffers.

Are Dark Matter Residue and Excited Photonic Matter gasses or liquids?

I did pipe residue upwards last time, more than 10m. I had a pipeline pump that said 0 headlift, but it also didn't seem to flow without it.

Technically neither but they act like gasses :)
