Difficult to learn?
I read that you can make your factory as simple or complicated as possible, but how's the learning curve? Easy to learn?

If you start from the very beginning, you get a lot of useful tips. Play with them a bit and the rest is up to you. You determine the speed and difficulty.

there is depth to crafting, but not critical.

if you want casual, build many.
if you want to build few, learn this or that.
tryn to get the ratios balanced is the main maths headache.

The resources are unlimited, you can freely dismantle and rebuild entire factories, and there's no external threat that puts you on a timer or can end your game.

The production chains are also relatively simple until later on in the game, and you can deal with overflow simply by chucking it into the grinder.

It's a little subjective, it's easy in the way that building something in minecraft is easy, if you are good at designing and know what you want to build, actually building it isn't very hard.

Its not difficult at all, its not a puzzle game. It might test your skills in organisation, but if you are not organised you can still succeed in this game, there is no set way to do things.

Pacing is set by the player.. The learning curve isn't steep, but even after thousands of hours I'm still learning and picking up a new trick here and there.. It can be as deep or shallow as you make it.

Absolutely it's a jigsaw puzzle game where the end picture is up to the individual player.

Not difficult at all... You have several nodes which produce base products. For example... iron, copper and lime. Then you build extractors to, well, extract the base material. Then you build smelters to, duh... smelt the ore into ingots.

And then the crafting begins. It's as simple as buidling a crafter, then telling it what to make. You'll see the amount of items it expects to get, so... you feed that into it and out comes the rest.

Of course it's going to get tricky if you have a resulting product, but then... need that product to build yet another one ;)

Plates are made from iron ingots. Rods are also made from iron ingots. Screws are made from rods but re-enforced plates are made from plates + screws. So... you may need to do a bit of "jugling" with your materials to get the most out of it, which is also the satisfying part in satisfactory.

It's really not that hard, but the trick is to make sure it's all working as efficient as possible. But seriously... when push comes to shove and you're having issues... worst case you can always do some manual crafting as well.

I would also watch some beginner guides on youtube

Very easy to play, perhaps no learning required. You may want to do the math on your machines though.

Easy to learn, difficult to master.
