I found 1,838 tagged titles there, maybe one of those will suit your needs, but you've found the Satisfactory discussion board, most posters are already fans of this game, not looking for other games, and may resent players asking for these types of suggestions, and just want to play Satisfactory, you know what I mean? Then there is always YouTube and the Internet.
Honestly, it's going to be real tough to get a medieval production-line game, since they DIDN'T have automation and logistics to this level back then. But I'll look at my wishlist to see if there are more I'd spotted and not tried. There's one that seems like it might be close...

Whatever the hell this is supposed to be. I'd heard it described as a sort of Zelda Breath of the Wild + well EVERYTHING. Looking at the screenshots and the one video I'd seen a while back, it was.... certainly a bit of EVERYTHING.

I'd tried Volcanoids out in a demo or something a long time ago. It was VERY VERY rough, with UI oddities and bugs out the wazoo. It's been a year or more since then though, so I hope it's improved. Sort of steam-punk vibe to it. Not quite Medieval, but older-fashioned than SF.

Another that looks oddly identical. If you showed both of them to me side-by-side, I'd swear they were the same game. So no clue on whether it has population control to go with management.

Here is the one that def doesn't fit the medieval bill. Looks a bit like 3D Factorio. Came across it in the steam store, but had not heard a whiff of it anywhere else. Reviews are kind of low on it, despite it looking quite impressive. Seems to be barebones, so only use if you like automation for automations sake. Like, no story or end-goal.
