I would think that the next "logical" progression would be something like cold fusion myself, clean, efficient, but so far "impossible" in our time, on our planet.
I guess getting into a "rocket" would depend upon the pioneer's contract, perhaps it's a life-long contract type of deal, and perhaps they are really androids or drones of some type too, not really sentient humans, controlled by players through their "connection" via PC or something, avatars.
But resources never run out. There are a ton of resource nodes on the map. Scouring the map and tapping every single resource out there is a monumental task (and at that point you can probably say you 'beat' Satisfactory).
Using it as an arbitrary miner/transport vehicle doesn't seem to hold much value. If the resources it brings in are variable, it holds no value because you can't plan for it and optimise, if they are static, you're creating a loop that at some point will surely trend to zero. The cost of resources to send the rocket out will break even with the benefit of resources gained.
I believe the devs have said interplanetary travel is way beyond the scope of this game. It's only real purpose that I can think of would be to send things off-world, which is what the Space Elevator does.
As cool as a rocket animation akin to the Space Elevator would be.
One thing that might be cool would be using it as a long distance transport. For a true end-game travel option with a minimum distance, to allow you to move around large scale factories a lot faster (ie. Grass Fields to Dune Desert). Unless we eventually unlock a Teleporter with the alien tech ^^
