You need to finish the whole prologue including the boss fight. After the following cutscene you can save the first time.
Honestly, dont play the beginning on hard, set it to normal or even easy till you can save.
Then you can change it again. There are NO difficulty related achievements in the game or any consequences for switching the setting around.

Setting the difficulty to Easy gives you the ability to enable a bunch of "Auto Plug-in Chips" in the pause menu of the game. These plug-in chips are meant to ease up the difficulty of the game, and makes the character automatically do certain stuff, such as attacking, dodging, etc. In a way, it makes the game play itself a bit.

If you're still struggling with the prologue area then I highly recommend enabling those if they could help.

Got past it, I just think it was a bad design choice. Very annoying to have to do the whole thing from the start.

Rest of game seems great though.

It's not a bad design choice it actually serves a purpose in the game lore wise. Also just to let you know the game (and it will even tell you) does not auto save since it's part of the lore of the game. Once you beat the first boss you will see what I mean.

Yeah I know I'm already past it.

Just think the first part is annoying. Repeating things is not fun.

plus during ingame there are vending type machines you can save on once you "save" / unlock them

They have a rather large area around them where you're able to "remotely" save by using the quick save function in the pause menu as well (Start -> A -> A).
