What you can try is to manually completely delete the EAC folder in the game's installation directory and then carry out a file verification. This will download the folder again.
If this hasn't already helped, please let us know your system properties and it's best to upload the "saved" folder once and give us the link so that the developers can better see what happened.
Happened again. I had to AFK to heat my food and when I came back, there it was a fatal error.
I uploaded my zipped Save folder to WeTransfer:

I'm gonna try what you mentioned about manually deleting the EAC folder and verifying in steam.
Worth checking for updated driver.
I did just mention in my post that I did a clean uninstall and reinstall of my Nvidia gpu drivers.
Manually deleted the EAC folder in the SCUM files directory and did a verification in steam. It was reinstalled automatically. Then I opened up my game save and it happened again. Doesn't seem to work. Or Do I have to do this + delete my whole config folder?
5950x / rtx 3060 12gb / 4x16 (3600) RAM / Nvme 980 pro... 850w power suply.
Been gaming for the last 3 years on this setup. And with this game i have a bat into my face at the moment.

Unfortunately, the cause is not that easy to identify. Therefore, after maintenance and a new attempt, it is best to upload the "saved" folder so that the developers can take a closer look. The more data that can be collected about it, the easier it is to find the cause. Maintenance helps because potential sources of error can be reduced this way.
By clean the registry, what specific things should I be cleaning up? Anything related to SCUM?
I suggest the use of a tool like Ccleaner or similar tools. A cleanup of the registry can help in many regards.
