M9 vs HS9 vs HFS9

Aside from looks at mag cap, are there any other differences? Less jam? Quieter? Etc?

Differences are as follows.
I think There are no other differences.
I use the HS-9, to which I can attach a sight. It's also lighter.

Small correction: all of them can use sights. I'm currently using an HS SF19 with a Shark Reflex sight. I've added them to the M9 as well.

You can attach the sight on the other 2 as well, but it depends on what sights you are placing on them. Pistol sights in general should be able to get attached to all pistols with few exceptions.

In terms of performance, HS SF19 looks the best.

I assumed SF was like Special Forces variant, is there any difference, do the two HS only have one mag type, I assume they look slightly different and maybe sell for different prices?

Both have their own type of clip. The SF19 has a slightly longer barrel and is also used for competition shooting irl. Ingame the clip fits 19 rounds + 1 in the chamber.
The HS 9 has a shorter barrel length, is used in military and law enforcement in some countries, eg Croatia, the clip fits 16 rounds +1.

My EDC is the Block though.

There are differences between SF19 and HS9, yes, they both use the same ammo, 9x19 mm but the similarity stops there, some of the differences are the length of the barrel, weight, muzzle velocity, and so on, you can find more difference between the models online. :)
