Increase the amount of animals in the game?

Is there some setting that I can increase to increase the likelihood of encountering an animal to hunt in my lifetime?

You can up the amount of allowed hunts per day up to 64 in the server settings.
That's the most you can do about this.

You have server settings menu where you can tweak various things if played in SP or if you are a server owner/admin.
