I can however give you some tips / clues :
Stabproof vest offers excellent melee protection but it will struggle against any kind of firearms, it can reduce the bullet damage a bit if you're getting shot by a small caliber but don't expect too much.
Military Ballistic Vest will offer little in the terms of melee defense but it will do much better against small - medium caliber bullets. For PvE it's actually a downgrade from the stabproof vest, but it does have some inventory space.
Armor Tactical Vest offers pretty good melee protection and the best bullet protection. If it has good durability - it can even save you from the 50. BMG bullet. It also offers inventory space for storage, but it weights a lot so your character will lose more calories and get tired more quickly.
Improvised leather vest will soon make a comeback and it offers small amount of melee damage reduction and negligible amount of bullet protection. It does have a holster though, so it's a good early crafting choice to get that much needed storage space.
Improvised stabproof vest offers solid damage reduction for melee and low bullet protection.
Improvised bulletproof armor offers small melee protection and pretty solid bullet protection.

there's some hardcore servers that have them deal insane amount of damage and wearing stabproof vests doesn't make that much of a difference....
If it looks the same, it offers the same protection.
We will see, since the game is not nearly finished and lots of new things / systems are being added ... in time you can expect a lot of rebalancing / nerfing all around.
Improvised items are always weaker and perform worse than their factory made counterparts. In this case, the improvised stabproof vest will offer less protection when comapred to the stabproof vest you find as loot.
