No seriously... dont eat salty stuff and drink enough.
80% drinking 20% eating veggies...
Salty stuff or meat only every 2nd ingame day.
thats what ive did and i reduced it from 1200% down to 600% in about 8 hours of playtime
I have been at 0 energy since I made my current character. The calories sometimes climb into crazy numbers like the sodium too. No amount of eating the right things has ever made it budge.
I would assume it's just a complicated system that will take some time to perfect.
Anything you pick at a farm or in a garden is generally pretty good. The processed/canned foods vary. Just check their contents as you find them and after a while you'll know what has high and low levels of salt.
Don't forget that when you urinate about 50% of the volume comes off your salt level (if you're at 50% bladder your salt will go down by about 25).
Salt does not matter for anything at this point, period. High or low amounts of it can safely be ignored. Only metabolism things that really matter now, are calorie balance and body fat %.
All of this will likely change with the upcoming metabolism update, whenever it gets here.
To address the main question - sodium will not affect your character in any negative way even if it accumulates in insane amounts. This will be resolved once we finish reworking our metabolism system and implement it properly into the game.
