Otherwise, it's mission selection--replaying certain missions from the campaign at your choosing--and probably New Game+ --which changes almost nothing except allowing you to retain all progress from your previous run.
This has been the Ace Combat culture since day 1. I doubt it's changing any time soon since the IP head of this has clearly said that he wanted to play this one safe.
I'm not saying the older way is better or anything. Just that this is the expectation to come in with. If you're really autistic, you might get 60 hours out of Ace Combat 7, but most normies will probably jam through it in under 10.
The difference is that a 'full experience' from 1990-2012 didn't cost, potentially, hundreds of dollars. Today, between DLC and microtransactions, a video game can potentially cost more than a console.
We also don't know if it will have assault records/medals like 6 did, which made 100% it require multiple playthroughs on multiple difficulties, IIRC.
Even without that, ace combat games typically require a couple (usually 3 at minimum) playthroughs to get everything.
