As for tin ingots, it seems only those things that are harvests or manually created are listed in the crafting menu. Those that are made via a shop without any user action are not. Tin ingots are made by placing the ore you mixed with charcoal in a bloomery that makes your tin ingots.
Ever since games started coming out on the internet (vs 3" floppy/DVD) along with pre-release, alpha/beta access, etc...developers have gotten cheaper and lazier when it comes to proper and adequate documentation (remember those hard copy game manuals that came in the box with the discs?) and instead leave it up to users and 'forums' for delivering as you stated - some of the most basic things.
I agree it's somewhat annoying that tin ingots are not present in the "resources" section, to explain how they are made.
as for shift+click stacking... ya, i get its annoying, but give them some more time, its hard to wait for what seem like simple addon to something that seems like it has been in development for a long time but some things are best to wait for their update to roll out while making a list here on the forums of features you feel would make the quality of life in experience within the game better for everyone without completely losing balance.
