Maya is not that good against some of the raid bosses because they generally are immune to phaselock, apart from getting slagged by Ruin.
So if you are wanting stuff that is specific to raid bosses, it depends on the raid boss.
For general farming, I would suggest Maya. Who is my main character, so I am a bit biased.
Melee Zero is phenomenal for mobbing. You can chain Execute in Deception and clear out a whole stack of dudes. It obviously requires a few skill points, so you won't get the most value out of this until at least lvl 31 (and preferrably lvl 50). You can also try a hybrid build if you don't want to go full melee, it still works but you will rely less on Execute and a bit more on your guns. I've solo'd Terra with Zero (abusing Pride Rock). His critical skill bonuses help here, and you've also got the meme build were you stack Critical Ascension before taking on Terra and then one shot him (long and complex setup though, look it up if you are interested). I know Bore is a one shot kill on certain bosses like Bunker and Hyperius.
Maya probably has the most options for mobbing. Her kit is just tailor made for that. Chain Reaction+Wreck, Fleet melee, Converge shenanigans... Really it's up to you, you can't really go wrong. Cat SMG Maya is completely overkill for mobs, but probably a good option for solo raids (haven't tried solo raid with her yet but Cat Maya is what I used for the Warrior).
Axton is a little bit more subtle but still very capable. I personally find that his strength is in a lot of low tier skills rather than 1 or 2 big higher tier skills. Learning to use the turret effectively is key. He's very versatile, I've played him with assault rifles, smgs , Tediore Etech pistols, and shotties, and he thrived with all of these (I have a soft spot for shotty Axton though...). I've solo'd Terra with him and you can see videos of people using him for lots of bosses. Again, his little skills shine here and can be abused. Look up the 5 seconds kill on Hyperius abusing his reload speed skills with an Avenger. It's pretty funny.

I love my Zero, Axton and AR Maya, but after zooming around the game with 11/5 fleet and life steal god-mode on, there's no going back from this amount of fun!
I guess the anarchy build up time kills it for her on raid bosses, but she shouldn't have much problems running regular bosses or mobs. I'm real fond of some shotguns with her, stuff like Conference Call.
I haven't got very far into Maya yet, but she looks really good overall. I'm just not sure of the best way to heal with her, theres an awful lot of delay to stuff like sweet release or transfusion grenades.
She can be a beast but... playing as her is repetitive, as her overreliance in endgame on sham/norfleet or fibber is... ehh.
Maya for mobbing tho is probably the most fun class overall. Great crowd control, multiple ways to heal and slag enemies, high dmg output, extreme mobility and in general some other really fun skills - like chain reaction.
Although i am mega biased as Maya is my favourite vaulthunter in all borderlands games.
Haven't tried Gaige but I love the design, she's definitely on my list!
Best way to heal with Maya is all the ways... Just grab all the skills :) They are all good, but yes they all require you to be killing or at least fighting stuff: Sweet Release and Life Tap are kill skills, Elated is linked to your phase lock, Sustenance only really kicks in when you take damage. That said, if you take multiple skills and use a Moxxie weapon, you will have incredible sustain, practically invincible as long as you are doing damage. If you are holding a Moxxie weapon, your Phase Lock damage will also heal you (works best with Ruby or Grog obviously).
If I only take one heal skill, I take Sweet Release. It's tier 1 so you don't have to waste any skill points to get it if you plan to invest heavily in the other trees, and it works really great. Killing one enemy is enough to get you back to full health. You just have to play a little cautious while the orbs are flying to you: find some cover and wait for them. Note that you'll have to be a little closer to the enemies since the orbs seem to expire a lot sooner than Transfusion Grenades. They seem to have weird pathing and get 'stuck' occasionally, but nothing a quick straf can't fix. Maybe pair that with a high capacity shield if you are worried of dying before you can grab your orbs.
Transfusion Grenades are always good if you need even more sustain, but is a bit redundant with Sweet Release. They just work the same really, but the orbs don't expire as quickly (so you can be further away), and you can also chuck the nades from cover. It's really the safest heal in the game. I like to take another grenade mod though since playing with Transfusions non-stop gets boring and Maya doesn't really need them. She also excels with a lot of other mods, particularly Singularities: Singularities into Phase Lock is hilarious, and very powerful if you have a lot of AoE skills. You'll need a good Shock grenade to strip your shields if you are using the Love Thumper with Fleet. I use a 0 fuse Tesla and it does the job nicely. The Tesla field also heals you while you're holding Grog/Ruby :) Otherwise, pick whatever you feel like.
I play Zero as a hybrid pistol/melee with a Stalker mod and it works nicely. Shoot at enemies until your shields go down, Deception, Execute, and then fly across the map back to safety. Rinse and repeat :)
Sal has a skill that increases his movement when his shield breaks. Both Gaige and Axton have kill skills that increase movement. Ordinarily, none of these will be as fast as Breakneck Banshee Maya though.
There is a glitch you can perform with Axton relying on the Expertise skill (increased movement while ADS), but only on someone else's server, and though it can make him much faster than Maya, it is a glitch, and many hosts will not appreciate your doing this in their lobby.
