Don't bother with gear farms in that mode though it would be too weak for TVHM and UVHM
Leveling up in UVHM is never a problem because the enemies always scale, but keeping your gear useful is the bigger problem.
Starting UVHM at 50 is a good idea. There is sufficient content in the 5 DLC's to make you very over level - you will not be able to complete them all before the start of UVHM.
Decide on which ones you want to do, and keep an eye on your level.
I went to TVHM as late as level 36 (co-op game) and it was hard to not go past level 50 for UVHM start. My TVHM playthrough contained only story missions and one DLC (pirate booty), that was enough exp to get from level 36 to 50 in TVHM and start UVHM at optimum level 50. You might be able to play two DLCs in TVHM or one DLC and side quests whil still keeping under level 50. UVHM is hard enough to start in level 50, you don't want to go over it.
As the others have pointed out: You do NOT want to be over-leveled for the start of UVHM.
Being over-leveled in Normal and in TVHM makes the game easier. Being over-leveled at the start of UVHM makes the game harder.
Because the enemies in UVHM are dynamic: They scale to your level, always.
Your gear is not dynamic. UVHM is not about leveling. UVHM is about keeping your gear up to date. Leveling is an incidental process that occurs while you're trying to maintain your gear which actively degrades your progress.
