are you mining while playing or something else like that?
I have played a bit of BL2 with UHD Texture pack, at both 1440p and 4K; all been good.
I have 1080 Ti.
I'll monitor video RAM use though, and report back.
Only 1.5GB video RAM at 1440p.

1440p native resolution. Only using about 1.6GB vid RAM. No idea how you folks are using 5GB-10GB.
1.6GB vid RAM does seem a bit low though for UHD Textures.
Although I am not sure BL2 is working with Nvidia DSR at 4K, since VRAM usage doesn't really increase.

I was only using about 2 gb of VRAM when it happened, though.
That's normal. I get the same on my GTX 1080. Probably related to BL2 being a 32-bit DX9 game. The 3GB/4GB VRAM limit was a big reason why WinXP/32-bit and DX9 needed to be retired as games began to use more than that.
Windows 10 Creator's Update back in 2017 addressed this limit, however games or API injectors like ENBSeries need to be programmed to use it and BL2 obviously has not been. You can actually test how much VRAM your OS will allow DX9 games to use with this tool[enbdev.com] and running VRamSizeDX9.exe
For myself, it reports 24416Mb, which is exactly what Task Manager reports[imgur.com] (8GB dedicated VRAM + 16GB Shared RAM)

I still wouldn't expect it to be crashing out though from my own experience with the game so far. I'm running it at 3840x2400 (2560x1600 monitor + 3X DSR) and it uses 99-100% of the 3GB of VRAM the game can see but I've been playing for about 40 hours with the HD pack and not had any crashes. It's just pegged at 3GB usage always.
Lol I am on 1080p with the 4K texture pack and it doesn't even reach 4gb of Vram [well it's quite obvious why] xD
I had to remove NumStreamedMips=0 from all TEXTUREGROUP_* except Shadowmap under [SystemSettings]
And change back a couple of MinMagFilter=Aniso to Linear.
