Gibbed is Windows only.
What you want is Bordertool2: [see below]
Bordertool2 is actually better than Gibbed, because it includes a Profile editor too.
Obligatory comment #1: Always back up your save folder BEFORE attempting any file edits.
Obligatory comment #2: It's better to play the game for yourself. That isn't to say that having a Save Editor can't sometimes be useful, but don't rush to max level. This is an ARPG, not an MMO. The fun starts at level one, there is some end game content, but it's only a small percentage of the game and you'll miss a lot if you try to rush there.

Yea I have my Salvador at level 40 and im legitimatly doing that but im just wanting to try things out, I have BorderTool2 but im not sure how to use it (cant find the foler with the save file)
Just for you, I'll change it. However ...
So's back seat moderating (which is what you just did).
And Steam's position on Save Editors isn't actually the same a their policy on actual hacking/cheating programs.
And ... Borderlands 2 isn't VAC enabled.
Yep, checked. I was right.
Press-and-hold Option. Mouse up to the Go menu. With Option depressed, you should see Library on the list, select it.
You want: HD->Users->[your user name]->Library->Application Support->Borderlands 2->WillowGame->SaveData->[folder with a really, really long number]
That folder with the long number is your save folder.
Back it up BEFORE you try anything with the editor.
In the modern versions of the Mac OS the Library is hidden so that people (who don't know better) don't mess up stuff they shouldn't be touching. I don't think it was a wise decision on Apple's part, but maybe it paid off in less tech support calls for them.
Regardless, don't try to search, go look manually.
