Your melee build is nice, but would probably suffer vs armored enemies, because of how it is specced to boost fire damage. Here is one that is a more viable against different enemy types:

A lot of healing is down to elemental empathy while you are rampaging, so getting some leech or Vladof Grenades is a huge help.
General Hybrid build:

RtB is there to get you out of sticky situations rather than to serve as an aggressive move, you can probably kill slagged enemies in melee though.
Melee build for flesh enemies:

If you get a Flame of the firehawk it will make you almost immortal. Make sure you get the one with the Hyperion capacitor, because if you get all Maliwan parts Krieg won't be able to light himself on fire.
Krieg Gun builds are a bit harder it is dependent on what enemy you are fighting and what guns you are using. Can't really recommend one, specifically. I have a really cheesy build that I use with a Jakobs cannon. Stupidly kills with a Jakobs cannon activate blood bath, which in turn boosts Krieg's gun damage, giving you insane DPS, underrated strat!

You are relying heavily on slag to keep yourself on fire, you can set enemies on fire with an elemental weapon if you really want to, and it also gives a bit of healing from elemental empathy, but the Jakobs cannon does all the work. Get an explosive relic and it gets even better!
Vora and Pete can be bloodsploded, making them the easiest to kill (although Vora is a bit harder to bloodsplode)
Terra is second, requiring a blood bath build and a fire conference call.
Haderax is third, blood bath and a Lyuda (to stun Haderax), then a fire conference call to finish him off
Hyperius can be beaten using a Flame of the Firehawk and a slag rubi, but it is such a slow process. If you are lucky enough to get a corrosive topnea (some prefer a corrosive Norfleet), then it speeds things up a bit (topnea is broken with Krieg, because it reduces ammo per shot, and so at max bloodlust stacks your mag size is huge, thus giving you tons of shots!), used to damage the robots and to get Hyperius's shield to break. Weapons are a bit tougher to choose from, but generally you need a Rubi for healing the FoTF will keep you up easily, except against certain Hyperius attacks, like the one where he shoots the discs, so make sure you are moving and not just standing still.
There is a fairly well-known melee strat that requires very specific items, I don't like it personally, video by joltz:

Gee is boring, not even difficult, just boring. Fight takes way too long. Hellborn build and Flame of the Firehawk are essential here though. Worms can be a bit troublesome if you start getting low on ammo (especially at OP10), but as long as Gee is absorbing those puddles and your health is staying up, you're all good. Melee can help save a lot of ammo.
Dragons are very difficult; Krieg is my least favourite character to use against the dragons. I use joltz's strat: https://www.youtube.com/watch?v=48gxitW1UYU
I tend to use a rough rider (shield that has 0 capacity, in exchange for damage resistance and max HP increase) because generally with krieg shields are quite useless, and his HP is almost always under attack. Since his HP is regularly exposed one could argue that making use of Salt the wound and its shotgun damage boosts is very useful. It also keeps you in melee range if you need to Release the Beast.
