The first miniboss you find is Knuckle Dragger - drops the Hornet
MidgeMong - Kerblaster

Some of the raid bosses are realistically solo-able, at least as a goal to work/farm toward to. The Headhunter DLCs all have repeatable bosses at the end too, which are a step up from the mini bosses and a very large step down from the raid bosses. The tray chests from the Marcus' Mercenary Day are farmable and can contain legendaries and pearls.
The OP level gauntlet (Digistruct Peak) always features multiple mini bosses and is definitely a challenge.
The four main DLCs also have repeatable end bosses that can be challenging and rewarding.
Summer Sale in a couple weeks will be a good opportunity to get them. They are really worth it. The Tiny Tina DLC especially is truly amazing.
If I wanted or enjoyed short, I'd not play Borderlands.
The Tiny Tina DLC is almost expansion-length, longer than some full price games we are sold these days, which is wonderful. For me, it's hands-down the best DLC for any game that I played. I loved the writing, the pacing, the gameplay, the end boss, the humor. Fine DLC. Sorry you didn't like it!
