there are different work modes like "Multi Culture" for the plantations to stop the fertility from decreasing. There also is one for the ranch, I just don't have the name to my hand right now. :)

but in case anyone else stumbles across this threat:
as Penultimo already pointed out, you can (and always should) set your plantation to multi-culture mode so the quality doesn't decrease over time.
However if you already had your plantations set as monocultures for a while, like I did, and the ground quality is already bad, it will slowly recover again if you don't cultivate the land there for a while.
Maybe it works to just set your plantations to multi-culture and just wait, but I'm not sure about this. What's probably better anyway is to move them to a different spot, that is still unused because then the plantations start to generate resources immediately again. If you liked your previous spot you can then move them back or built new ones there, after the ground recovered.
