Most of the racial bonuses or powers are really not that great. Only a few stand out in the vanilla game like the Orc's berserk rage or Breton's passive resistance to magic. So a lot of players just ignore them or use mods that make all racial powers better and on more equal ground with each other. It comes down to preference for most people.
It might be based on the race's appearance or on their lore or for literally any other reason. A lot of people like anthropomorphic animals, and a lot of people who do consider themselves furries. The furry fandom is an extremely huge one especially since it doesn't cover any specific piece of media but is generally associated with any kind of media or fanart that has or focuses on anthro/human-like animals. Khajiit definitely fall in line with what people in the furry fandom are generally interested in.
However Khajiit have a boost to unarmed combat that stacks with any enchantments/gear that improves unarmed combat, and their night eye ability is infinitely reusable (no recharge or limits at all).
The Argonian waterbreathing and disease resistance (which stacks with amulets/rings of resist disease) is also worth having.
The rest can easily be replicated by enchanting (well so can the argonian's but ask anyone who has struggled to find the waterbreathing enchantment and they will agree with me)
The vendor/loot RNG can be brutal.
On my current playthrough, I was at level 59 and had not once seen anything with the Paralysis enchantment. So I just consoled it in, to disenchant it.
The same happened to me with the Disease Resistance enchantment on my first playthrough: also over level 50 without it ever showing up.
Night Eye as an easy toggle with no Vampirism is nice I guess, but really its just about being a cat burglar. Its a side file for lulz and Thieves Guild trophies.
But seriously, the answer is furries.
