Unofficial patch fixes a lot, but unlike most I don't need SkyUI.
So most of my mods add stuff, like new dungeons and quests, or new items...
That's me.
The other reason, yah, getting more out of the game. Better looking characters, better looking map, better lighting, seasons, weather, etc, etc. And having more followers to add to the annoyance of not being able to get anywhere ;-)

Also mod things for immersion, better landscapes, more realistic armor replacers, player specific animation sets for roleplaying, and a much more varied soundtrack, among other things.
Also I like the DLC sized new content mods for obvious reasons.
Mods can make things look very pretty. :-)
Can't stick to one thing for too long.
There are some side reasons (bugs etc) but if I modded, the main reason would be graphic overhaul mods to make the graphics more up to date. That doesn't change the normal game experience for the most part, it just makes things look better.
It's not horrible looking or anything, but I could see updating it to be more of what we're used to for graphics of today and having a more immersive experience. So that would be my main reason, if I did indeed mod.
If I play the older games in the series ever, I probably will look to see what graphic update mods they have for them (looking at screenshots of Morrowind makes me think I'd want to mod the graphics). Maybe not, I'm good at using my imagination and it's sometimes interesting to see those original graphics, but overall I enjoy graphic upgrades for 3D games especially.
Now, around 10 years later I got it on Steam when it was heavily discounted and have started playing it. I find the game to be much better than it used to be, at least a lot prettier and I've downloaded several mods to make it even better, just so that I will enjoy my game time with it more.
One mod that seems helpful is the "racemenu" where I was able to create my character and then save that exact creation. I guess if I ever want to turn one of my characters into a companion mod, that's the start.
Other mods that I am really enjoying are follower/companion mods that are fully voiced. It makes the world seem more immersive and I especially like it when they comment about the quests that I'm doing.
I think "hate" is a strong word. Certainly there are aspects of the base game I'm not fond of. I find the magic and combat systems lacking. Luckily there are a host of mods that allow me to change that. That's what I find cool about it. How many games out there let you personalize the experience to your taste? Especially to the extent that you can with Skyrim/Fallout 4? Too few, my Dudes. Too few.
That pretty much sums up the situation.
I will admit starting multiple identical threads over time is pointless.
