Just whatever blunt weapon is good - I've had success with the warhammer, the maul, and the hafted mace. You can also use a tournament lance if you can find it for purchase (which only works because it magically never breaks)
Reach > All for most Prisoner Capturing Weapons

It really depends on if you're doing it from horseback or not. I've used a wooden club if I had nothing else, but prefer a decent one-handed blunt weapon with the best reach I can find.

PS - Seconded on the "Tournament Lance." Some mods, like Prophesy of Pendor, have Blunt Lances which are prime choices for easy prisoner capture, especially against tough enemies.

I like the iron staff. Good speed, decent reach and if you hit the heads of your enemies from horseback you also get good damage. Not so good without a horse, but since blunt weapons lack reach most of the time, the staff compesate that and gets the job done.
Iron staff is great for horseback, not so great when on foot. I like using military hammers. They are awesome. Rhodok Sergeants use them IIRC
Yea, military hammer is probably the go-to for non-combat specialists in the first place, and they're a decent blunt weapon
any blunt that deals above 25b, is within your weapon proficiency and possibly with a good reach (xcept one handed, speed matters there) will serve you really well. if you cant knock out a sergeant quick, you can still keep him grounded by spamming hits on him

There are some ridiculously powerful bash-em-in-the-head Prisoner Gatherer weapons in some mods.

Prophesy of Pendor: Doom Mace - https://pop3.fandom.com/wiki/Doom_Mace A great weapon for the player and especially Companions or CKO troops designed to capture a great number of prisoners.

Warsword Conquest: A ridiculously overpowered huge-reach Flail that is a drop-only item, IIRC. Its reach is stupid-long... It's one of those "I dgaf about "balance"" kinds of weapons. Using it basically makes the player a one-man slaver army. (Very good if one is a spider-rider.)

Any other overpowered blunt prisoner-capturing weapons in other mods that you guys remember? There's usually at least one, somewhere, in the weapons list.

Useless when you are on foot

on foot i definitely second the iron staff too, especially if you got a bit athletics to keep enemies out of reach. though if you want to avoid getting fired at, i think any one handed mace with improved modifiers plus a shield can almost knock anything down, assuming you at least have 3 in power strike

I like the Battle Hammer[pop3.fandom.com] more, just because you can crush through shields. Onehanded it is very slow, but on horseback it does not matter that much and with 40+ AGI it gets fast enough.

Hmm... I might try that. The biggest advantage the Doom Mace has for mounted combat is a decided reach advantage. That's generally pretty critical when considering weapons for mounted combat. Though, for blunt weapons and prisoner capture, one can be willing to make certain sacrifices. (Considering it's one of the best ways to make money, I've used just about every one-handed weapon for that, so this might be a nice change.)
