I have never really noticed health start conditions when replaying a memory, but would hope that it would give you full health when restarting a sequence rather than your original start condition. Otherwise, yeah, I can understand your frustration.
You can only replay that specific memory. Once you have done that, the game takes you back to the DNA menu, and from there, if you leave the menus and go back to the game, you are in a present that is after the ending.
I finished the guild quests. It was the sons of Romulus and glyph missions that I hadn't finished. You may be right about going in full health and undamaged armor when replaying specific memory's though. However, I noticed that when I went back and replayed the memory where you first encounter the sons of Romulus, my max health was half of what it was before I went back.
My memory is a little sketchy on the Romulus missions but thought they were integrated into the story line. Though again I'm sure I go back to get the 100% sych after the main storyline is complete.
You've obviously replayed a Romulus memory so I'm not sure what you refer to when you say "You can only replay that specific memory" ? The DNA menu should let you access all memories so you can get 100% sync.
