There is no mechanism provided by EA to control such things otherwise, aging is all on or all off I'm afraid.
Ambrosia resets the Sim's progress in the current life state to 0. Elder Sims, for example, will be pushed back to the point where they just transitioned from Adult to Elder. It will do the same for Young Adult and Adult Sims (not sure about teens), so if your goal is to hold your Sim in the same life state forever, you need to start feeding them Ambrosia during that life state and never let them transition out of it. Remember that it does not push you back into a previous life state; it only holds your Sim in the current one (but with a week-long +75 moodlet).
