i have sims 3 (vanilla no dlc) and i want to know is it possible to have as title states a immortal main sim while aging is turned on and all others age and die?

That kind of selective control over aging with no in-game effort whatsoever requires a mod that allows taking over the game's aging manager. The usual suspects would be Buzzler's Aging Manager mod (from MTS) or, for much more of a mod than you might want even if you were not averse to using them, NRaas StoryProgression.

There is no mechanism provided by EA to control such things otherwise, aging is all on or all off I'm afraid.

You can if you have your sim eat a Life Fruit every day. Pretty sure that's in the base game.

As a vampire you can get a lifetime reward that lets you live forever (Called 'Immortal'). As a normal sim you can get an age freeze potion that does the same thing, as a lifetime reward. Couple that with a sim with the unlucky trait and they won't die from freak accidents either.

My bad, didn't read you had no expansions. Those require supernatural and generations respectively.

It can be done in the base game without mods, but does require some care and feeding (literally) to keep it going. You need to be able to cook Ambrosia. This requires a Sim whose skill level in Cooking is 10 to prepare the meal (plus $12,000 to buy the recipe), skill in Fishing is 10 to catch the Deathfish (5 if you are able to use Angelfish bait, but I think you have to be Level 7 to read the book that lets you do that), and skill in Gardening is 7 to plant the Life Fruit. Collect all of the "Unknown Special Seeds" you can find, especially around the graveyard. One or more of those should be a Life Fruit seed depending on the luck of the draw. It's a lot simpler if your "immortal" Sim has all of those skills, but you can make it a household project if you wish.

Ambrosia resets the Sim's progress in the current life state to 0. Elder Sims, for example, will be pushed back to the point where they just transitioned from Adult to Elder. It will do the same for Young Adult and Adult Sims (not sure about teens), so if your goal is to hold your Sim in the same life state forever, you need to start feeding them Ambrosia during that life state and never let them transition out of it. Remember that it does not push you back into a previous life state; it only holds your Sim in the current one (but with a week-long +75 moodlet).

There are ways to extend your youth but no way to shut off aging just for you

there is the mod Buzzler's Aging Manager mod (from MTS) that has successfully stopped aging for my main sim. by using this you can lock any number of sims into a specific age and have them be immortal while the rest of the family ages as set in options..
