You haven't seen any videos on it because it's hard to find people who are good enough to do it, want to do it, and have the time to do it with everyone else. That and nobody watches MvM anyways and that video would never take off.

Realistically, no it depends. Lower level difficulty missions could be beaten without upgrades sure. It's just that higher level difficulty ones aren't going to be beaten so easily. You'll run into issues where you simply cant output enough damage in time. Tanks would be the real issue in higher difficulties, due to no damage upgrades and lack of ammo.
You would most likely end up stacking engineers and heavies. With someone swapping to demo on waves with ubermeds, or spy on waves with a lot of mini bosses to kill, or stock medic on waves with boss bots or heal on hit/kill bots.
Some higher difficulties have bots that boast damage bonuses in addition to crits. They can already shred you at full resistances, so if they so much as sneeze in your direction with no upgrades you'll die.
I'd say you can probably manage all Bootcamp missions, as well as Oil Spill. Steel Trap may be doable.I doubt you'll get Mecha completed, at least not without some coordinated abuse of mechanics and lots and lots of time. Two Cities might be doable, especially the Mannhattan missions, but you might run into issues on some of Rottenburg tank damage. Gear Grinder falls under the same bit as Mecha.
Thank you for your post, however that video was not really a vanilla mvm game. In fact I once had a team of five play the mission crash Course, and made it to wave 4. That's when people left the game. That was where the milestone was left at to this day.
