I don't have any sort of bias for either class so I'll chime in here.
Engineer is a class worth making a main as you can fill some crucial roles around supporting the team. Pyro is more of a secondary/offhand class. Though it's worth noting a good pyro player is an engineer's best friend as the 2 classes & their unlocks work wanders together.
Did a spy just sap your buildings & is coming to stab you? Nah your pyro buddy just burned him alive & helped you remove the sappers. Enemy soldiers & demos trying to blow you up? Nah the pyro just deflects the explosives back at them. Enemy team rushing your sentry with ubercharge? The pyro can airblast em away, likely dying in the process but also stalling out their uber.
Two classes that work well together.
Besides pyro isnt that good on higher tier games
Engineer is the most flexible class out of all, thus being fun and good even without building any sentries at all (yes you can carry whole games without a single building)
Maining a class is dumb, just play whatever you feel like at the moment.
(p.s if ur new, avoid spy and sniper. These classes are not the best for starters and require some game knowledge)
Doesn't matter, 40 hours into the game or 15,000 hours into the game.
Maining 2 or 3 classes as your prefered way to go is fine when you have experience . For example I play 90% of the time only 3 classes having about 4k in tf2. Its not that I cannot play any other class, more of a preference, as other classes just aint that much fun for me.
A worse kind of maining is one-tricking, where you literally stick to one single class and are hostile to all others.
Engi is fun if you are attacking and Pyro is fun if you are defending
