To clarify, didn't read your question well apparently: If you need to start from the beginning and need to choose between classic or DE, don't hesitate, just pick DE!
If you want to try out the insnanely OP builds allready created, then classic is for you.
If you want o try a well diversed balanced game, the definitive is for you.
There are plenty of differences.
Lone wolf as mentioned is nerfed a lot. Skills cap at lvl 10. Stats cap at 40 etc... so you will have pretty much every skill in end game.
Blood storm has had its size reduced, due to being to owerpowerfull.

We can't start the game for this reason as the physics are just TOO broked. Sad but the people I talked into buying the game don't want to start with it this broke either and may all refund.
Its mostly only for the early stuff in fort joy, like the chainmail and mage skirts. Later armors won't have this to such a noticable dedgree,
