Trance, I love split-screen but it wouldn't make any sense for a game where you take turns. Hotseat is the way to go.
I personally like Dungeon Defenders, but she struggles still with it a bit. I don't think she dislikes it, but she understands that Castle Crashers is easier for her to succeed at. It's pretty interesting seeing her try new stuff and learn the different games. I will check out the others you recommended.

Oh one other to look at: A Hat In Time. It's just a wonderful little game and you can add a second player for co-op while playing.
