In Zestiria your the straight forward hero intend on saving the world, whereas in Berseria your someone on a quest for vengeance.
Zestiria lacks a lot of polish and balancing, and Berseria is pretty much the game they made to remedy that. As such I'd advise getting Berseria.
Berseria has a deeper (better) story, more interesting characters and a better battle camera.
Zesteria has better music and is still an enjoyable game even though its considered one of the "less good" games in the series.
If you play Zesteria first you'll probably enjoy Berseria more since you'll understand the references, but if you were to only play one of the games ever in life I would choose berseria.
I did enjoy Zesteria, though. I think it was good as a once-through type game, but I'm not sure if I'll go back to it on a New Game+ to finish achievements like I've been doing with Symphonia and plan to do with Berseria.

...unless your one of those people who loves overly Japanese stuff.....most politically correct way I can word it.
The only thing Zestiria has is a couple of soundtracks; pretty much the 4 temples and one bossfight. Woop. And that is not to say that I find Berseria's music to be bad, because I actually don't - most of the tracks still remind me a lot more of Tales-music than Zestiria's tracks did.
Berseria has a far smoother combat experience, better AI, far more customization for your arte palette, less convoluted gear upgrading system, more interesting characters (and interactions between), and a more interesting story than Mr Goody-Two-Shoes ever has in Zestiria.
All Tales games are pretty overly japanese. Which is why many people think its still niche.
Both games take place in the same exact universe and Zestria has a lot more of the typical Anime cliches than Berseria. I mean, Chosen one and his childhood friend (whose the exact opposite) go out and meet clumsy chick with big breasts and a tsundere rogue from a secret society and save the world by fusing their powers together - which is amplyfied by yelling loudly. Well, guess yoU're into that sort of thing.
