Edit: FourGreenFields is right, if it's your first time playing heli, play some freeplay in the "Tutorial" section of the menu before you start.
Flying them is great, but shooting them down is a lot of fun, and really rewarding.
If you break your rotor during landing (or even kill some of those in the heli): Ok, ♥♥♥♥ happens. If you hover above the landing zone, descending at 1m/s, and get shot with an RPG - nope, the death of 7 people (you, and a full Huey) is your fault.
Other than that, what Rootin Tootin Putin said.
best thing to understand with helis, always be moving and zig zag as much as you can. don't crank up the collective (blade pitch for ascent/descent) all the way, it will bog your rpm and then you're a sitting duck and otherwise have sluggish attitude response. you can get away with half collective with enough speed, as your rotor disc translates into a big wing and provides plenty of lift at neutral as you go faster. slow down for tighter turns otherwise it's a weathervane and keeps the tail straight.
if your tail is disabled or blown off completely the only way to save it is to get enough altitude such that you can turn down the collective, it will slow down the spin and you work the cyclic (tilt) to gain some velocity towards base.
