But before you declare war make a defensive line with plenty of troops (and some forts) and let them attack into you and bleed out manpower and equipment while you wait for complete air superiority. Once you're ready for the counterattack equip your infantry with logistics and line artillery and attack to every supply hub one at a time only stopping to wait to repair them but I admit I was using tanks to push faster and make encirclements.
Since there's plenty of time to wait I added in super heavy artillery and started to refit my panzer IIs into infantry-tanks for extra armour as support "recon" to do something with them (again I was using a mod for support light tanks for slightly better stats and no recon but the concept is the same).
From there it's a cakewalk, this current run I'm testing silly playthroughs as Germany with every country in the world turning communist but it's not working as I intended as the other countries keep fighting each other and not joining the Comintern.

Or alternatively disregard everything I just said and cheat using space marines.
If you want a lazy strategy, for me personally I just created a bunch of infantry divisions, try using 9 infantry / 4 artilleries and a bunch of anti-tanks. Also ensure you have enough supply. 9/4 Inf/Art basically saves me for literally every country at this point, probably shouldn't be overly relying on it. Maybe try 9/4 + Anti-Tank support. But the USSR doesn't naval invade or anything really so not much to worry about except for pushing until the Urals. Since you're at war with the Allies, maybe try pushing through the Middle East? Ensure you at least build trucks and have enough trains to prioritize motorized supply and build railroads and infrastructure.
In short, since you're not using tanks or motorized/mechanized, just use mainly infantry based templates with either anti-tank and artillery.
Using the Mountaineer Ranger recon will greatly reduce that forest penalty.
Engineer support in the template will reduce the river crossing penalty.
General with engineer trait will negate river crossing with the Makeshift Bridges.
Amphibious tank design goes a long ways for river crossing as well (but it is later tech.)
If you are near the shorelines and not at war with UK or France you can use your fleets for coastal bombardment to their heavy emplacements on the ports.
Also do not forget spies will reduce their defense as well.
