You should learn how to create a local copy of the mods you want to play with and then update only if and when you want to
Ja, I use a local copy of the mods. But the game itself is updated nearly every day/week. Yesterday a patch, today a hotfix, for april a new patch is announced....
Irrelevant.
Lock your mods to a stable version of the game.
Revert the game to that version whenever an update drop.
Continue to play the game as you like it
