This is more like an outline to a guide, so I might have left out details.
You could do the focus open up the country to get the option to rebuild a capital ship which should help with naval battles. I never needed to do that. Alternatively, you can invade Bulgaria before going to war with Turkey and puppet all but the one Provence near your border. That will give you another area to draw supply and more room to trap Turkey divisions. Of course don't call in Bulgaria to the war if Romania is going to be in the war.
As far as the navy battle, I usually switch the navy to always engage. Greece has a superior navy to Turkey. You should switch the AI to never repair ships. You going to need to monitor navy battles very closely.
The whole early war with Turkey is very risky, so you need to micromanage every detail.
