You'll get an event that gives you the land a few months after they surrender

They do get the option to not honor the treaty, which cancels the pact and allows you to justify a war against them.

It's basically to keep the Allies from declaring war on the Soviets. Once Germany has capitulated Poland, they get an event to return the land to you. If they refuse, they will lose their non-agression pact and that means the Soviets can(and should) fabricate on Germany, and attack Germany before France falls.

If Germany does honor the pact, they will give the Soviets the land and the non-agression pact holds.
