Also, attacking from your occupied lands tends to give the provinces to you.
And then when I click on Rhodes, it says UK owns it, but on the map it shows as Canada. I'm confused. By conquer territory, I mean to make it so that it shows "CANADA" across the territory that my countrymen fought long and hard for, instead of the United Kingdom.
Whereas if you take Italian or German land it is owned by Italy and Germany therefore taking territory from them will give it to you.
So it's not so much that the UK is taking the territory it's that you are simply returning territory back to them.
For a better example, imagine Germany has taken Poland and you invade Germany taking a lot of land, any German land will go to you but any German-occupied-Polish land will be returned automatically back to Poland.
This mechanic only works if the war is still ongoing.
Hope that makes sense.
This was a feature in one of their much older games so I'm not sure if it's the case here, the feature was intended in that game for countries to be on their ally's front line helping them in their war and any territory taken would be given to the ally instead. But it would sometimes lead to weird stuff like what you just mentioned.
I'm still learning the mechanics myself but if what I said sounds like it might be right then my only advice would be to only invade from your own territory, which means direct naval invasions to get to other continents instead of landing in ally territory and walking your way to enemy land.
If this doesn't sound like the issue then it might be a bug, or some kind of other mechanic at work that isn't really working very well - so will probably be worked on in an upcoming patch (who knows?)
And no, CAPS, we fully gained our independence from the Crown after our exemplary performance in WWI. You can see this by the fact that we didn't declare war on Germany without a small debate first.
