How to actually conquer territory?
Playing as Canada, any lands I take over in Africa are given to the UK or France, depending on where I launch my offensive from. I desperately need more manufacturing, please help!

If you mean occupy and use their factories, I find it is random. From what I can tell, invading where there isn't any of your allied buddies makes you the occupier. If you mean keeping it till the end of times, stab at it at the end of the war during the conference thing.
Also, attacking from your occupied lands tends to give the provinces to you.

I used 5 Marines to kill the island of Rhodes just off Turkey, which gave control of the island to Canada, but then when I invaded the mainland with the same Marines, from Rhodes, it gives it to the UK.

And then when I click on Rhodes, it says UK owns it, but on the map it shows as Canada. I'm confused. By conquer territory, I mean to make it so that it shows "CANADA" across the territory that my countrymen fought long and hard for, instead of the United Kingdom.

It's dependant on who owns the territory. For example in Africa many of the provinces will be owned by the UK but are under occupation by Axis forces. Click the province and in the state view it will tell you who it blongs to.
Whereas if you take Italian or German land it is owned by Italy and Germany therefore taking territory from them will give it to you.
So it's not so much that the UK is taking the territory it's that you are simply returning territory back to them.

For a better example, imagine Germany has taken Poland and you invade Germany taking a lot of land, any German land will go to you but any German-occupied-Polish land will be returned automatically back to Poland.
This mechanic only works if the war is still ongoing.

It does make sense, but I invaded Italian-occupied Ethiopia immediately after Italy joined the war, and it gave it to Britain. So that doesn't really fit with what you've told me.

Haven't played Italy or Ethiopia yet, but maybe the UK has claims in Ethiopia? And if you play as Canada maybe it has something to do that Canada was in some cases still controlled by the UK back then? I can't say for sure and I am not an expert in Canadian history.

Huh, that is unusual. The only other thing I can think of is that your troops may not have been running on your own supplies. In the supply mapmode you can see where supplies come from and there needs to be some kind of link to the capital. It's possible if you were hanging out in British territory for long enough cut off from your own supply chain then you may have been running on British supplies so it's entirely possible it's a feature in the game to give territory to that country instead of you.
This was a feature in one of their much older games so I'm not sure if it's the case here, the feature was intended in that game for countries to be on their ally's front line helping them in their war and any territory taken would be given to the ally instead. But it would sometimes lead to weird stuff like what you just mentioned.

I'm still learning the mechanics myself but if what I said sounds like it might be right then my only advice would be to only invade from your own territory, which means direct naval invasions to get to other continents instead of landing in ally territory and walking your way to enemy land.
If this doesn't sound like the issue then it might be a bug, or some kind of other mechanic at work that isn't really working very well - so will probably be worked on in an upcoming patch (who knows?)

I'm going to reload and try to naval invade from French territory. Perhaps that will work.

And no, CAPS, we fully gained our independence from the Crown after our exemplary performance in WWI. You can see this by the fact that we didn't declare war on Germany without a small debate first.
