How To Add Carrier Planes To A Carrier
I understand the airifeld mechanics and I do have the proper planes for carriers, but they never seem to either be built with them (despite me have them) or manage to rearm themselves with more planes.

Probably a stupid question, but it is the one thing I just can't figure out right now.

I found it to be pretty much the same as airfields. click on your carrier from the air map mode while it's docked or holding offshore> click add air wing and then set the number to reinforce to> Can always check in the logistics tab how many planes you have ready to deploy.

I found my carriers were coming out of production with some planes aboard but wasnt quite sure if thats because I had some in storage or it buids as one item.

No worries. Having had a look there it seems that there is a blue button in the production screen when you build a carrier. It says something like: set standard loadout of planes and lets you select how many will be reinforced to the carrier once it's built

Yeah, I had set a custom loadout on built carriers already, but the planes still don't get assigned to those carriers. I will try the previous post and see what happens.

That advice did seem to work, now I just need to acually build the carrier planes instead of rediculous numbers of B-29s!

One has to research the carrier variant for the said type of plane as I myself have just discovered. Hope this helps.
