1. Start the game as some insignificant country and then open up the console and type "observe". You need to choose an insignificant country because the AI might play differently if it was ever controlled by the player, even if you didn't do anything with them. Once you are in observer mode you can just set the game speed to whatever you want and then press the space bar to start the time.

2. I don't think there is a way to hide the cursor. You can hide the UI by opening the console and typing "debug_nogui", but the cursor will still be there. You can just put it in the corner of the map so that it isn't that noticeable.
