Mobile Warfare or Superior Firepower are generally the best doctrines, templates don't change too much between the two. Sounds like your problem in the Alps was more an issue of templates and terrain, not the doctrine. For Superior Firepower to be the most effective, get go for integrated support companies, the boosts are far better than dispersed support unless you utilize artillery in unhealthy amounts for your divisions. Search the forums for good templates, most of the Infantry debate is between ten Infantry battalions or seven Infantry battalions and two artillery battalions. Both are viable, but have their pros and cons.
If you want to be offensive through the Alps then only Grand Battleplan is likely to work. This because you need those large planning bonuses so you can grind forward one mountainous area at a time. Mobile warfare is best if you can afford tanks and use them in the open but not good if you are trying to fight through mountains or are mostly infantry and artillery.
If you cant afford tanks then in many cases you are best using two templates: 10 infantry for defensive purposes and a few 7inf/2art or 14inf/4art for offensive use.
At the higher levels your infantry exists to hold the line, so just infantry with engineer support is the basic unit. The other stuff like Artillery is something of a luxury. The main power in an army comes from specific Armoured forces doing break throughs, over-runs and encirclements to break the enemy line.
Mass assault is a good way to get rid of manpower. I tend to build 1-2 endgame tank divisions for steamrolling across enemy front lines and endgame infantry divisions with heavy/modern tanks for defence.
